cherry pistachio chocolate bark

Most commercially bought  Easter candy is not the healthiest choice for your family, so why not make your own. This takes as much time as it takes to melt the chocolate and it is impossible to control yourself if it is close by! I chose pistachio and dried unsweetened cherries as my topping, but you can be really creative with your toppings and Enjoy Life chocolate chips for gluten and dairy free peeps.. One of our favorites is coconut with slivered almonds or cranberries with cashews. This also is a great way to allow your kids to help in the kitchen and create something spectacular. Hurry, Easter is just around the corner and this is the perfect treat to stuff in baskets or leave out during brunch for your guests to enjoy.

What you will need

  • 2 bags of Enjoy Life chocolate chips
  • 2 Tbs. coconut oil
  • 1/2 cup unsalted, roasted pistachios
  • 1/2 cup unsweetened dried cherries
  • 1/4 tsp. sea salt

In a double boiler or just a glass bowl over a sauce pan filled with a few inches of water, pour chocolate chips and coconut oil in bowl to melt over medium heat. When smooth and silky, pour onto a parchment paper lined cookie sheet pan. Level to your desired thickness and sprinkle dried cherries and pistachios. Finish with sea salt and leave to harden, around 1 hour on the counter or 30 minutes in the fridge. When completely set, break apart into 2-3 inch pieces. Serve and enjoy!
