The Holidays are all about cookie making. In my family, growing up, my mom made at least a dozen different varieties of cookies. Some were challenging to make, taking days for fillings to soak or dough to become the perfect consistency, so when the opportunity arises to make something simple you jump.

I can’t remember how these were created and when they showed up in the cookie list, but these Hello Dolly bars are a winner. Family askes me to make them for all occaisions and they make the best easy cookie to add to the cookie tray.

I only make gluten free treats for my family and most of them are favorites for everyone. No one, even all of the bosses can tell that these are gluten free!. I choose high quality, organic ingredients to lessen the guilt and dive into this deliciousness.

What you will need

  • 2 boxes gluten free graham cracker (these are my favorite)

  • 12 Tbs. unsalted butter

  • 1 cup semi sweet chocolate chips (Enjoy life)

  • 1 cup white chocolate chips

  • 1 cup fruit juice sweetened or unsweetened dried fruit (I used cranberries)

  • 2 1/2 cups coconut chips (Bob's Red Mill Unsweetened)

  • (1) 14 oz. can organic sweetened condensed milk

For the filling

  • after the jelly roll pan is lined with graham cracker crumbs, spread out chocolate chips, white chocolate chips, dried fruit, chopped nuts if desired and coconut flakes

  • slowly pour can of sweetened condensed milk over whole tray. I had no trouble covering with just 1 can, it should look like picture above

  • bake for 25 minutes in a 350F. oven

  • let set for 5 minutes, then cut ( I used a pastry cutter, which worked great) Cool completely before eating
