easy turkey meatballs {paleo}

I just needed something simple to make for dinner and the normal chicken and beef just wasn't what I was in the mood for. My kids are used to Sunday sauce, so I wasn't sure they were going to go for Turkey meatballs, but these turned out so tender and flavorful, that everyone was happy. These really take minutes to throw together and only need to simmer for about 30 minutes, so it is quick too. I served over Cappellos grain and gluten free fettuccini, but you do you and serve with any side you love. Buy some clean ingredient, store bought marinara sauce and you just made your life even easier! I kept the seasonings really simple, but feel free to add spices you like. Onion, garlic and red pepper flakes would be a good place to start. When I am seasoning food, I always think about everyone eating, and If it can be added in individually, I do it that way. This makes everyone happy and cuts down on complaining. These are great for make ahead on busy nights and reheat perfectly too. This recipe was enough for my family of 5 and still had some for leftovers. Now is the time of year when dinner time can get crazy with afterschool activities, so add this to your list of easy dinners!

What you will need

  • 2 lbs. organic ground turkey

  • 2 tsp. parsley

  • 2 tsp. basil

  • 1 tsp. salt

  • 1/2 tsp. pepper

  • 2 Tbs. olive oil

  • 2-3 Tbs. warm water

  • 1 large jar Marinara sauce

  • Optional ingredients, onion powder, garlic powder, red pepper flakes or romano cheese

Directions

I used a dutch oven for this recipe as I don't love using slow cookers. They definitely have there place, but I like browning, so I choose this route. You can always make adjustments and throw everthing in a slow cooker and cook on low for a couple of hours.

  • In a medium size mixing bowl, add ground turkey with spices and mix until incorporated, be careful not to overmix meat, it helps it to stay tender.

  • Add 2-3 Tbs. warm water and mix

  • Make any size meatball desired, but I made mine golf ball sized. Recipe made @ 24 meatballs.

  • Place meatballs into a preheated, dutch oven coated with 2 Tbs. olive oil.

  • Brown meatballs on each side and pour desired marinara sauce into pan

  • Cover and simmer on medium heat for 30 minutes.

  • If you are making this in advance, cook meatballs for 15 minutes, then place whole pan in the refridgerator until ready to reheat.

Serve with any pasta you love, we choose Cappellos and a big green salad. Fast easy and comforting. I can't think of anything better for dinner!
