cashew butter skillet cookie {paleo}

I have been wanting to try a skillet cookie for so long, and I finally took the leap. I feared disaster, how does the cookie come out of the pan? How could this possibly turn out good? Well fear not it was delcious and so much easier than taking the time to make traditional cookies. What's great is, there are endless combinations and add ins you can try, so make it your own if you wish. I wanted to stay very simple and mix cashew butter and white chocolate chips, but any flavor of chips or dried fruit would work. If you are sticking to Paleo, read ingredients as there are many options out there that are compliant. Make sure to cool before serving and if you want to add more Wow, make a side of berry compote, slice it up and add coconut ice cream. This idea seems heavenly to me!

What you will need

  • 2 cups smooth natural cashew butter

  • 3/4 cup coconut sugar

  • 2 egg

  • 2 tsp. vanilla

  • 2 tsp. baking powder

  • 1 cup white chocolate chips

Directions

  • Preheat oven to 350°F

  • In a medium sized bowl add cashew butter butter, eggs, coconut sugar, baking powder and vanilla, mix to combine.

  • Next add desired chocolate chips

  • Pour cookie dough into a 10 inch round caste iron pan, grease with coconut oil or cooking spray before adding dough

  • Place in oven for 30 minutes or until toothpick comes out clean

  • Cool completely before eating

  • Serve with coconut ice cream or fresh berries for the perfect treat
