I love salads, and making my own salad dressing is a must when eating real food. Think about it, it takes minutes to make, you can pick all of your own ingredients and you get to bypass horrible oils like soybean and vegetable, along with all of those crazy items no one can say, but certainaly should not eat (can you say xantham gum, gar gum or carrageenan). I have so many reasons for making my own condiments, but the most important being, I love to cook and to show my kids that food just tastes better when it it real! 

This Paleo Honey Mustard dressing is perfect on a green salad, but I have also used it as a dip for homemade chicken fingers or just raw veggies. It's fresh and bright tasting for cold summer salads, but something tells me I might tweak it a bit, add some bacon, warm it up, and throw it over spinach this Fall! Whatever you may be thinking, my advice is to make a double batch, store it in an airtight, glass jar and make all things salad this week. You won't be disappointed with this one.

What you will need

  • 1/4 cup Spicy Brown Mustard (I used this)

  • 6 Tbs. Extra Virgin Olive Oil (my favorite)

  • Juice of 1/2 lemon (about 2 Tbs.)

  • 1/2 tsp. apple cider vinegar

  • 1/4 cup raw honey

  • salt and pepper to taste

Add all ingredients to a bowl and simply whisk to incorporate fully. Store in a small glass mason jar away from heat for a few weeks.
